Rational Design of Sol-Gel Synthesis of Nanostructured Particles in Sheared Suspensions


Abstract

Process design for manufacture of nanostructured particles is carried out by coupling particle dynamics with computational fluid mechanics addressing particle formation and growth in stirred tanks that are widely used in the food industry. Emphasis is placed in relating process parameters to the characteristics (structure, porosity, or size) of the nanostructured particles that can be used as organic or inorganic matrices in delivery of food ingredients.
