Nanoparticle Stabilised Food Dispersions – Controlling Function from Nano- to the Macroscale


Abstract

The proposed project aims:
- to develop functionalised food-nanoparticles for interface stabilisation in food dispersions

- to provide the science base for novel food grade nanocarriers

- to develop a novel optical tool capable to monitor in-situ nanoparticle formation as well as material structuring and aging processes in a non-perturbing way

- to develop a novel Diffusing Wave Spectroscopy (DWS) sensor
